How to prepare mushrooms
Clean the honey mushroom of foliage, sand, adhering land and other contaminants. This can be done with a rag, soft brush and a small knife. If worm mushrooms come across, throw them out.
Cut the lower parts of the legs. Remove the film in the form of a “skirt” under the hats. Cut large honey mushrooms into several parts, leave the small ones whole. Rinse under running cold water.
Frozen mushrooms are not necessary to defrost. But if there is a lot of ice on them or they sticks together in one lump, you can pour them with hot water.
How much to cook mushrooms
It depends on how they will be used after. You need to cook fresh honey mushrooms after boiling:
- for soup – 30 minutes;
- before pickling – 35–40 minutes;
- Before freezing – 20–25 minutes;
- in front of the hot – 15–20 minutes (many do not cook mushrooms, believing that they are more fragrant).

Frozen mushrooms are cooked 15–20 minutes after boiling. You do not need to cook them before frying, you can immediately lay them out in the pan.

Boil salted water in a pan. Per 1 liter of liquid is enough ¹⁄₂ tablespoon of salt. Put the mushrooms there, bring it to a second boiling and cook the required time.
Often honey mushrooms are prepared in two stages, draining the first water. It saves them from bitterness. But this is not necessary, since not all mushrooms can really bitter. If not sure, then use this method.
Cook mushrooms for 5 minutes after boiling. Then throw them on a colander so that the liquid glass. Put the mushrooms in boiling salted water (¹⁄₂ tablespoon of salt per 1 liter), bring to a boil again and prepare the remaining time.
If you make soup with fresh mushrooms, then after 30 -minute cooking, throw them to the rest of the ingredients for at least 10-15 minutes, and then let the dish brew. Mushrooms because of this will not be boiled, and the soup will acquire a mushroom taste and aroma.
